Olive Oil Ice Cream
Olive Oil in Ice Cream!? Sounds strange I know, but it's good....this recipe doesn't need an ice cream maker.
1/3 cup sugar
1/3 cup heavy cream
1 cup half and half
4 egg yolks, beaten
1/3 cup olive oil
1/4 cup chopped mixed nuts with sea salt
Always, use the best quality olive oil you can. Look for an olive oil with a fruity light flavour like this one. You could even try an infused olive oil...lemon maybe? Read more about choosing olive oil
Pour heavy cream,half and half, and the sugar into a sauce pan and mix well.
Heat the mixture over medium heat until the sugar is dissolved; Use a whisk and stir often.
Add the beaten egg yolks to the pan very slowly stirring as you pour.
Continue stirring until the egg yolks are thoroughly mixed. It should take 8-10 minutes for the mixture to thicken and coat the back of a spoon.
Turn off the heat then add the olive oil and mix well.
Cool the mixture over an ice bath or wait until it has cooled and put it in the refrigerator overnight.
