Linguine and Pesto

Absolutely Delicious! Basil Pesto is popular in our home. I grow my own basil and freeze it to use all year.

I usually serve my home made basil pesto on linguine along with roasted chicken or pork tenderloin and a fresh green salad.  My husband absolutely loves the stuff!

basil pesto
2 cups fresh or frozen basil
½ cup olive oil
½ cup grated parmesan
¼ cup pine or walnuts
1-2 cloves minced garlic

Place all the ingredients in a blender and process until well blended. 

The magic bullet blender works really well for this. I've had two, but they both went away to college with my two oldest daughters. Now I have a Big Boss and I honestly don't know that one mini blender is better than the other. 

Anyway, you may have to scrape the sides down and add more olive oil or a little water. Spoon onto hot linguine or any noodles you like.​

Grow basil in your garden, a window box or a planter by the back door - where ever you can. It's soooo good. It freezes well and is so much better than dried. Pine nuts cost more per ounce than gold! Well maybe not, but sometimes I use walnuts or no nuts at all. If you make a bigger batch of pesto, you can freeze it in ice cube trays then transfer to plastic freezer bags for "presto pesto" :)
