Colourful Quinoa Salad |

I love, love, love this quinoa salad recipe! Use quinoa for a healthy source of complete protein.
I adapted this recipe from a couscous salad recipe. My mother in law got it from a friend of hers who is an excellent cook and gardener. Couscous doesn't offer much in the way of nutrient value, so I use quinoa. I made a few other little changes as noted below........it's so yummy.
![]() 1 cup of quinoa or couscous cooked according to package and cooled
1/4 cup raisins or dried cranberries - I like cranberries 1/4 cup chopped fresh parsley - I use cilantro instead 3 green onions 1 diced tomato 1 small zucchini 1/4 cup crumbled feta cheese 1 finely diced red bell pepper Sometimes I add really small pieces of broccoli too Dressing - whisk together: 1/2 cup olive oil 1/4 cup lemon juice - fresh is best but I use bottled too 2 cloves minced garlic 1 tsp salt - I don't add this or maybe half a tsp instead 3/4 tsp ground cumin 1/4 tsp turmeric - I use 1 tsp of curry and don't add cumin or turmeric 1/4 tsp hot sauce - I don't bother with this either. Stir together all the salad ingredients, pour on the dressing, mix it up, and enjoy. back to vegetables and salads back to recipes |
